Spiced Apple & Pear Crisp
Sugar and spice and everything else you love about a classic apple crisp—with just 25 minutes of prep time! 3 apples, about 1 1/4 lbs., such as Pink Lady, peeled and cut into 1" chunks
3 Bartlett pears, about 1 1/4 lbs., peeled and cut into 1" chunks
1/2 cup packed light brown sugar
3 Tbs. + 1/3 cup all-purpose flour
1 Tbs. lemon juice
1/2 tsp. + 1/8 tsp. ground cinnamon
1/2 tsp. ground ginger
1/8 tsp. salt
1/4 cup cold butter, cut into cubes 1/2 cup old-fashioned rolled oats Ice cream, optional
Preheat oven to 375° F. Coat 2- qt. baking dish with cooking spray. In large bowl, toss apples and pears with 1/4 cup brown sugar, 3 Tbs. flour, lemon juice, 1/2 tsp. cinnamon, ginger and salt. Transfer to baking dish; reserve.
In medium bowl, combine remaining 1/3 cup flour, 1/4 cup brown sugar and 1/8 tsp. cinnamon. Using pastry blender or two knives, cut butter into flour mixture until mixture has texture of coarse meal.
Stir oats into flour mixture; with fingers, squeeze mixture together until moist clumps form. Sprinkle topping mixture over reserved fruit mixture. Place baking dish on rimmed baking sheet. Bake 50- 55 minutes or until golden and bubbly. Let cool at least 10 minutes before serving. If desired, serve with ice cream.
