Enjoy Spain’s chilled gazpacho soup!

In Costa del Sol, a favorite way to relax and refresh is with a bowl of the region’s gazpacho—a cold, veggie-packed soup that’s as simple as it is delicious! ❏ 3 cups tomato juice ❏ 4 large plum tomatoes, diced ❏ 1 large cucumber, seeded, diced 2 ribs celery, diced 2/3 cup diced red onion 1/4 cup olive oil 3 Tbs. red wine vinegar Juice of 1 lime 3 cloves garlic Salt, pepper and hot sauce to taste Fresh parsley and pepperonci­ni, optional If desired, reserve some of vegetables for garnish. In blender, combine all remaining ingredient­s except parsley and pepperonci­ni; cover and blend until desired consistenc­y. Serve garnished with parsley, pepperonci­ni and reserved vegetables. Serves 6.
