Enjoy Spain’s chilled gazpacho soup!
In Costa del Sol, a favorite way to relax and refresh is with a bowl of the region’s gazpacho—a cold, veggie-packed soup that’s as simple as it is delicious! ❏ 3 cups tomato juice ❏ 4 large plum tomatoes, diced ❏ 1 large cucumber, seeded, diced 2 ribs celery, diced 2/3 cup diced red onion 1/4 cup olive oil 3 Tbs. red wine vinegar Juice of 1 lime 3 cloves garlic Salt, pepper and hot sauce to taste Fresh parsley and pepperoncini, optional If desired, reserve some of vegetables for garnish. In blender, combine all remaining ingredients except parsley and pepperoncini; cover and blend until desired consistency. Serve garnished with parsley, pepperoncini and reserved vegetables. Serves 6.
