Mozzarella and Tomato Bruschetta

(8 oz.) fresh mozzarella, drained, diced 3 large plum tomatoes, seeded, diced 3 Tbs. extra-virgin olive oil 1 Tbs. minced fresh thyme* 1/2 tsp. freshly ground pepper 1/4 tsp. coarse salt Toasted baguette slices Small fresh thyme sprigs, optional
In medium bowl, combine mozzarella, tomatoes, oil, thyme, pepper and salt. Spoon onto toasted baguette slices. If desired, garnish with thyme sprigs. Serve immediately. Makes 2 1/4 cups (8 servings).
Note: Topping may be prepared up to 1 hour ahead; store at room temperature. Spoon onto toasted baguette slices just before serving.
Minced fresh oregano, basil, or parsley may be substituted for thyme, if desired.
