Mozzarella and Tomato Bruschetta

Not only is this crowd-pleaser so easy to make, “it incorporat­es the beautiful colors of Christmas!” says Sandra 1 cont. (8 oz.) fresh mozzarella, drained, diced 3 large plum tomatoes, seeded, diced 3 Tbs. extra-virgin olive oil 1 Tbs. minced fresh thyme* 1/2 tsp. freshly ground pepper 1/4 tsp. coarse salt Toasted baguette slices Small fresh thyme sprigs, optional

In medium bowl, combine mozzarella, tomatoes, oil, thyme, pepper and salt. Spoon onto toasted baguette slices. If desired, garnish with thyme sprigs. Serve immediatel­y. Makes 2 1/4 cups (8 servings).

Note: Topping may be prepared up to 1 hour ahead; store at room temperatur­e. Spoon onto toasted baguette slices just before serving.

Minced fresh oregano, basil, or parsley may be substitute­d for thyme, if desired.
