Soothe your joints with Chilled Salmon and Citrus Salad

Yes, you really can ease the ache with this delicious entree, which is rich in anti-arthritis and cartilage-strengthen­ing nutrients, thanks to its salmon, extra-virgin olive oil and onions!

❑ 4 salmon fillets, 6 oz. each ❑ Salt and pepper ❑ 1/2 cup minced red onion ❑ 1/2 cup dry white wine ❑ 1/4 cup extra-virgin olive oil ❑ 3 medium yellow onions, sliced ❑ 2 tsp. grated orange zest ❑ 3/4 cup orange juice ❑ 1 tsp. grated lime zest ❑ 4 cups mixed salad greens ❑ Fresh dill sprigs, optional ● Sprinkle salmon with salt and pepper, then press red onion onto fillets. In 10" skillet, heat wine over medium-high heat until bubbling. Add salmon; bring liquid to simmer and cover. Cook, without turning, until salmon is opaque in centers, 6-7 minutes. Transfer salmon and liquid to heatproof container; cover and refrigerat­e. Meanwhile, in large skillet, heat oil over medium heat; add yellow onions. Cook, stirring , until golden. Remove from heat; stir in orange zest, juice and lime zest. Transfer to heatproof container; cover and chill. To serve, drain onions, reserving liquid. Divide greens among four plates. Top with salmon and onions. Spoon reserved liquid from onions over salmon and lettuce. Garnish with dill. Makes 4 servings.
