To do: Heat 1 Tbs. veg­etable oil over medium-high heat. Add 4 cups corn; cook un­til ker­nels be­gin to char. Stir and cook for an ad­di­tional 2 to 4 min­utes. Turn off heat and add 2 Tbs. mayo, 1⁄ cup 4 sliced green onions, 1 finely chopped jalapeño pep­per (op­tional), 1 tsp. chili pow­der, 1⁄ cup chopped cilantro, 4 Tbs. queso fresco 2 cheese and the juice of 1 lime. Serve im­me­di­ately.
