To do: Heat 1 Tbs. vegetable oil over medium-high heat. Add 4 cups corn; cook until kernels begin to char. Stir and cook for an additional 2 to 4 minutes. Turn off heat and add 2 Tbs. mayo, 1⁄ cup 4 sliced green onions, 1 finely chopped jalapeño pepper (optional), 1 tsp. chili powder, 1⁄ cup chopped cilantro, 4 Tbs. queso fresco 2 cheese and the juice of 1 lime. Serve immediately.
