Beefy Tex-mex Pasta Toss

Our meaty meal kicked up with smoky chipotle pepper comes together in just 35 minutes on the stovetop

1 lb. ground beef

1 onion, chopped

1⁄ tsp. ground chipotle chile pepper 2

1 (10 oz.) can diced tomatoes & green chilies, such as Ro-tel

1 ( 8 oz.) can tomato sauce

12 oz. penne pasta

2 cups shredded sharp Cheddar cheese

In large nonstick skillet over mediumhigh heat, cook beef, onions and chile pepper until beef is no longer pink, 8–10 min., stirring often. Add tomatoes and sauce; over medium-low heat, cook until onions are tender, about 10 min., stirring often.

Cook pasta according to package directions; drain and return to pot; toss with 1 cup shredded Cheddar cheese. Spread over beef mixture; top with remaining shredded cheese. Cover and cook until cheese melts, about 5 min. If desired, garnish with fresh basil leaves.
