2 medium car­rots, diced juli­enned 12 oz. mush­rooms, 16 cups chicken diced broth 4 cloves gar­lic, 6-8 cups shred­ded minced ro­tis­serie 4 Tbs. dried minced chicken onion 4 cups green 8 oz. but­ter cab­bage, sliced into bite-size 4 tsp. dried pars­ley strips In large soup pot, sauté cel­ery, mush­rooms, gar­lic and onion in but­ter 3– 4 min­utes. Add pars­ley, car­rots and broth; sea­son with salt and pep­per. Sim­mer un­til veg­gies are ten­der. Add chicken and cab­bage; sim­mer un­til cab­bage is ten­der, 8–12 min­utes. Makes 16 serv­ings about 4 grams net carbs each
