Pear, Pomegranate and Blue Cheese Salad

Your fam­ily will love our easy gourmet salad of good-foryou greens, juicy pear slices and rich blue cheese that goes from prep to plate in just 15 min­utes

3 Tbs. red wine vine­gar 1 tsp. Di­jon mus­tard 1⁄ tsp. salt 4 1⁄ tsp. pep­per 4 1⁄ cup olive oil 3 1 Tbs. minced shal­lots 3 pears, cored, cut into thin wedges 3 cups baby kale 6 Tbs. crum­bled blue cheese 3 Tbs. pomegranate ar­ils

In small bowl, whisk to­gether vine­gar, mus­tard, salt and pep­per un­til salt dis­solves. Slowly whisk in oil un­til dress­ing is emul­si­fied; stir in shal­lots. Re­serve.

On serv­ing plat­ter, ar­range pear wedges; top with kale. Sprin­kle with blue cheese and pomegranate ar­ils. Stir dress­ing again and serve driz­zled over salad.
