Berry- chocolate wow

Make their day with our easy, light-as-air meringue topped with luscious white chocolate mousse and juicy strawberri­es

Strawberry Meringue Cake Extra sweet with chocolate three ways!

8 oz. white chocolate, chopped

2 cups heavy cream

2 tsp. vanilla extract

3 oz. semisweet chocolate

2 egg whites, at room temp.

1⁄8 tsp. salt

1⁄8 tsp. cream of tartar

2⁄3 cup sugar

1 lb. strawberri­es, quartered

¼ cup seedless strawberry jam, melted

Easy as 1,2,3!

1 Heat oven to 325°F. Line bottom and 11⁄ 2" up sides of 9" round springform pan with foil. In microwave-safe bowl, microwave white chocolate, 1⁄ cup heavy 2 cream and vanilla extract in 15-sec. intervals, stirring, until smooth. Cover; refrigerat­e until thickened, about 1 hr.

2 Chop 2 oz. semisweet chocolate. On medium speed, beat egg whites, salt and cream of tartar until foamy, 2–3 min. Gradually beat in sugar until stiff and glossy, 5 min. Fold in chopped semisweet chocolate. Scrape into pan. Bake until lightly browned, crisp and dry, 40– 45 min. Let cool completely on rack.

3 On medium speed, beat remaining heavy cream until stiff. Fold into white chocolate mixture. Cover; chill until firm, about 2 hrs. Remove meringue from pan; remove foil. Transfer to serving plate. Spoon white chocolate mixture into meringue shell. Toss berries with jam. Place on top of filling. Chop remaining semisweet chocolate; in microwave-safe bowl, microwave with 1 Tbs. water in 15-sec. intervals, stirring, until melted. Drizzle over berries. Serve immediatel­y.
