Whether you prefer standard-cut, waffle, crinkle-cut or shoestring, Laura Washburn, author of Fries, says sprinkling on the right salt can take your fries to the next level. “Something chunky, like sea salt, is ideal because it adds extra crunch and a burst of intense saltiness,” she notes. Also smart: “Make a quick dipping sauce of equal amounts of ketchup and mayo, then add some zing with a good splash of something fiery, like hot sauce or even hot, smoked ground paprika.” To give fries even more flavor: Washburn suggests topping them with a handful of chopped parsley—“it adds freshness and visual appeal.”
