Delight your friends with fortune cookies! “Just move quickly when folding them,” says Joanne Ozug (Fifteenspa­tulas.com). “There’s a short window when they’re pliable, so it’s best to make a few at a time.” To make Ozug’s cookies: Jot down fortunes on paper. Use a mixer to combine 3 large egg whites, 1⁄ cup of melted butter, 3⁄ cup of

2 4 sugar, 1⁄ tsp. of vanilla, 1⁄ tsp. of almond extract and 3 Tbs. of water

4 4 until frothy. Add 1 cup of flour; mix until flour starts to dissolve. Spoon batter into 3 (3") circles on a parchment-lined baking sheet. Bake for 7 minutes at 375°F. Flip circles over and set a fortune on top; fold in half. Place cookies on the rim of a cup and fold ends down to crimp. Pop into a muffin tin to hold shape; cool. Repeat until dough is gone. Optional: Dip cooled treats in melted chocolate and sprinkles. Makes 36 cookies.
