Cinnamon French Toast Sticks

This fun twist on a breakfast favorite is even more irresistib­le served with quick honeyed apricots

4 (1" thick) slices challah or egg bread, about 8 oz.

4 eggs

2⁄3 cup milk

2 tsp. sugar

1 tsp. ground cinnamon

8 apricots, pitted, quartered

1⁄3 cup honey, warmed

Heat oven to lowest setting. Cut each bread slice lengthwise into 4 sticks. In shallow

bowl, whisk together eggs, milk, sugar and cinnamon. Coat large nonstick skillet with cooking spray; heat over medium-low heat. Working in batches, dip bread sticks into egg mixture to coat all sides; transfer to skillet. Cook, turning, until lightly browned and cooked through, about 1 min. per side. Transfer to baking sheet; keep warm in oven. Toss apricots with honey. Serve with French toast sticks.
