Creamy Beer Cheese Soup

1 Tbs. butter

1 carrot, chopped 1 small potato, chopped

1⁄2 leek, chopped

3 cups chicken stock 1 cup light beer

2 cups grated Cheddar

1⁄2 cup half-and-half

1 In pot, melt butter over medium heat; add vegetables. Cook until tender, 8–10 min.

2 Stir in stock and beer; bring to a boil over medium-high heat. Reduce heat to low; stir in cheese and half-and-half. Cook, stirring, until cheese melts. Season to taste with salt and pepper. Serves 4
