Lemon-kissed cheesecake
Enjoy this treat for breakfast or as a sweet ending to any meal
16 oz. cream cheese, at room temp.
2 cups ricotta cheese
4 eggs
1 cup Swerve sugar substitute
1⁄2 tsp. lemon extract
1⁄2 tsp. vanilla extract
Grease 8" spring form pan; line bottom with parchment and grease again. With mixer, beat cream cheese until smooth. Add ricotta until smooth. Add eggs, sweetener and extracts until smooth. Pour into pan and bake at 350ºf until mostly firm in center, 45–50 min. Let cool, then refrigerate to chill through. Serves 12
