Meatball Stroganoff
Budget-friendly ground meat goes gourmet in our tasty (and super- easy!) twist on creamy beef stroganoff
1 lb. ground beef
1⁄3 cup seasoned dry breadcrumbs
1 egg
2 Tbs. Worcestershire sauce
1⁄2 tsp. onion powder
1⁄4 tsp. pepper
1 Tbs. oil
8 oz. mushrooms, quartered
1 cup sour cream
1⁄2 cup canned beef broth
2 Tbs. chopped red onion
2 Tbs. chopped parsley
Mix beef, breadcrumbs, egg, Worcestershire, onion powder and pepper; shape into 12 balls. In 12" nonstick skillet, heat oil over medium-high heat. Add mushrooms; brown, 7– 8 min. Remove. Reduce heat to medium. Add meatballs; brown, 5– 6 min. Add mushrooms. Mix sour cream and broth; stir into skillet. Bring to a boil. Cover; over medium-low, cook until meatballs are no longer pink in centers, 10 min. Serve topped with onion and parsley.
