Peanut Butter Caramel Brownies
Bliss is guaranteed from first sight to last bite with this sweet treat that layers up lots of scrumptiously nutty yum
1 (18.2 oz.) pkg. dark chocolate fudge brownie mix 1⁄ cup oil 3
1 egg
1 cup creamy peanut butter, at room temp. 1⁄ cup confectioners’ sugar 2
1 (13.4 oz.) can dulce de leche, at room temp. 3⁄ cup cocktail peanuts, chopped 4 1 cup semisweet chocolate chips
1⁄ cup heavy cream 2
Heat oven according to brownie mix package directions. Line 9" square baking pan with enough foil to overhang sides by 2"; coat with cooking spray. In bowl, mix together brownie mix, 1⁄ cup water, oil 3 and egg until batter forms. Spread in pan. Bake until toothpick inserted 1" from edge comes out clean, 30–35 min. Cool.
In bowl, stir together peanut butter and confectioners’ sugar until smooth; spread over brownie. Cover; chill until topping is firm and chilled through, about 1 hr. Carefully spread dulce de leche over peanut butter layer. Sprinkle with cup peanuts, pressing lightly into dulche de leche layer. Cover; chill until firm and chilled, about 1 hr.
In microwave-safe bowl, combine chocolate chips and cream; microwave in 15-sec. intervals, stirring, until melted and smooth; cool. Spread over brownies; sprinkle with remaining 1⁄ cup peanuts. 4 Chill until set, about 20 min. When ready to serve, using foil to help, lift from pan; cut into squares.
