Coffee Cupcakes with Mocha Frosting

From-scratch frosting and a kiss of coffee flavoring elevate mix- easy cupcakes into wow-worthy treats

1 (15.25 oz.) pkg. yellow cake mix

3 eggs

1⁄ cup oil

4 tsp. coffee extract

11⁄ cups butter, at room temp.

3 cups confection­ers’ sugar

11⁄ cups semisweet chocolate

chips, melted, cooled

Heat oven to 350°F. Line 24 muffin cups with cupcake liners. Prepare cake mix with

1 cup water, eggs and oil as package directs. Stir in 2 tsp. extract. Divide among liners. Bake until pick inserted into centers comes out clean, 18–20 min. Let cool.

On medium speed, beat butter until fluffy. On low, beat in sugar, then chocolate and remaining extract until combined. On medium speed, beat until smooth, 2 min. Pipe or spread over cupcakes.
