Zesty amaranth salad

Ingredient­s:

● 1 cup amaranth

● 2 cups water or vegetable broth

● 1 cucumber, diced

● 1 cup cherry tomatoes, halved

● 1/4 cup red onion, finely chopped

● 1/4 cup fresh parsley, chopped

● 1/4 cup fresh mint, chopped

● 1/4 cup extra virgin olive oil

● 2 tablespoon­s lemon juice

● Salt and pepper to taste

Instructio­ns:

● Rinse the amaranth under cold water, then combine it with water or vegetable broth in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes just until cooked and the liquid is absorbed and the amaranth is tender. Remove from heat and let it cool.

● In a large bowl, combine the cooked amaranth, cucumber, cherry tomatoes, red onion, parsley, and mint.

● In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the amaranth mixture and toss to coat evenly.

● Chill the salad for at least 30 minutes before serving to allow the flavours to meld. You can purchase your amaranth from Bio Innovation/hutano Foods in Harare, Zimbabwe.

Spiced baked sweet potato fries

Ingredient­s:

● 2 large sweet potatoes, peeled and cut into fries

● 2 tablespoon­s olive oil

● 1 teaspoon paprika

● 1/2 teaspoon garlic powder

● 1/2 teaspoon onion powder

● 1/2 teaspoon cumin

● Salt and pepper to taste

SPICY AIOLI

● 1/2 cup avocado oil , olive oil or less fatty based mayonnaise

● 1-2 tablespoon­s lemon juice

● 1 teaspoon Dijon Mustard

● 1 clove garlic grated

● 1/2-1 teaspoon cayenne pepper Instructio­ns:

● Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

● In a large bowl, toss the sweet potato fries with olive oil, paprika, garlic powder, onion powder, cumin, salt, and pepper until evenly coated.

● Arrange the fries in a single layer on the prepared baking sheet.

● Bake for 20-25 minutes, turning the fries halfway through, until they are golden and crispy.

● To make the aioli. Mix all ingredient­s in a bowl until smooth and creamy. Season with salt.

● Serve the fries with spicy aioli and ketchup. Enjoy!
