There was no surprise for many people. After having developed his career by the side of some of the greatest names in the Spanish gastronomic realm, such as Santi Santamaría, and the best restaurants of the country —including Racó de Can Fabes, Sant Celoni and Ábac— it was only a matter of time for Chef Victor Martin to conquer a Michelin Star.
At his Trigo restaurant, nestled in a small street in Castilla y León, Valladolid, he bets on traditional cuisine with a dynamic menu, in constant renovation, depending on seasons, where natural and traditional raw materials take center stage. His proposals is based on the richness of a land that features one of the most privileged larders of the country and a well-assorted cookbook.
