Now if I have time for a short break, I head straight… home. I’m away a lot for work, so when I have spare time I love being home, by the beach in Sydney, spending quality time with my family.

I don’t have a favourite restaurant but I do enjoy dining in the middle of nowhere – under the stars with great mates, there’s nothing like it! This is something that we love to offer our guests at Emirates One&Only Wolgan Valley (5) – it’s the perfect place to dine among nature.

I’m planning to host culinary adventures in and around the valley, from foraging expedition­s gathering edible shrubs, flowers and berries, to tours of local artisan providores and winemakers.

I love an adventure, so recommend planning your journey to span over three to four days. There are so many aspects to experience and explore within the region: go not only for its ingredient­s and growers but also venture off the beaten track and attempt fly-fishing or four-wheel driving.
