One of the most refreshing things to happen in restaurant­s in recent years is the demise of the bullying behaviour once considered the norm in highly-pressurise­d kitchens in favour of a calmer, more collaborat­ive approach. What’s exciting us now is sitting at the counter of an open kitchen, watching chefs at work and chatting to them as they cook. This month we feature recipes from newcomer Neo Bistro, where head chef Alex Harper is supported by his ex-colleague and chef-patron Mark Jarvis of the award-winning restaurant Anglo (p114). The relaxed approach is evident in the laidback décor (exposed brick walls, not a tablecloth is sight) and a short, chalkboard menu of British seasonal dishes.

This informal approach is particular­ly welcome in the warmer months when simple, well-sourced and simply cooked food appeals most.
