Baked green eggs

SERVES 2 PREP 5 mins COOK 10 mins EASY V Heat oven to 200C/180C fan/gas 6. Mix together

100g chopped spinach, 4 tbsp vegetarian pesto, 100ml double cream and some seasoning, and tip into two individual shallow ovenproof dishes. Sprinkle over 1 tbsp finely grated Gruyère or vegetarian alternativ­e. Make two shallow hollows in the mixture and break an egg into each hollow. Bake for 10-12 mins until the whites are set and the yolks are still runny.
