Salmon burgers

Put 4 skinless and boneless salmon fillets in a food processor with 3 tbsp pesto, 1 tbsp capers the zest of 1 lemon and seasoning. Pulse until roughly minced, then shape into four burgers. Heat 1 tbsp olive oil in a frying pan and fry for 3-4 mins each side until cooked through. Assemble in 4 brioche buns with a few halved cherry tomatoes, a dollop of mayo and a few Little Gem lettuce leaves. Drizzle over 2 tbsp pesto to serve. GOOD TO KNOW folate • omega 3
