Keep lemon slices in the freezer

Cutting up a whole lemon when you need one slice is a bit wasteful and takes time. Open-freeze lemon slices on a plate, then put them in a freezer bag when solid. This way, you’ll have slices at the ready for all your cooking (try the lamb rack with Dauphinois­e butter beans on p30) or gin and tonic needs.
