Keep lemon slices in the freezer

Cutting up a whole lemon when you need one slice is a bit wasteful and takes time. Open-freeze lemon slices on a plate, then put them in a freezer bag when solid. This way, you’ll have slices at the ready for all your cooking (try the lamb rack with Dauphinoise butter beans on p30) or gin and tonic needs.
