Cheat’s spinach gnudi

Th­ese gnudi are like a lighter ver­sion of gnoc­chi. If you want to make them ahead, they can be re­heated in a gratin dish with the cheese sprin­kled on top.

200g bag spinach

150g gar­lic & herb soft cheese 100g fresh bread­crumbs 2 tbsp grated parme­san or veg­e­tar­ian al­ter­na­tive

Rinse the spinach in a large colan­der set over the sink. Pour over boil­ing wa­ter, then leave to cool and drain. Squeeze out the ex­cess mois­ture, then blitz in a food pro­ces­sor with the soft cheese, bread­crumbs and some sea­son­ing. Rub some oil on your hands, then shape the mix­ture into 20 balls. Cook in a pan of boil­ing, salted wa­ter for 2 mins. Scoop out, sea­son and driz­zle over some oil, then scat­ter over the parme­san to serve.
