Emma’s ul­ti­mate falafel wrap

1 Mid­dle East­ern style flat­bread or pitta

4-5 falafels (see recipe, be­low) 4-5 slices avocado small hand­ful of pars­ley, co­rian­der and mint leaves

Want to save time? Use shop-bought hum­mus in­stead of the tahini sauce. 1/2 lime, juiced gen­er­ous driz­zle sriracha

For the tahini sauce 75ml nat­u­ral yo­gurt ½ tbsp tahini ½ lemon, juiced 1 small gar­lic clove, crushed pinch ground cumin

1 For the tahini sauce, mix to­gether all the in­gre­di­ents with some sea­son­ing in a small bowl.

2 Warm the flat­bread in a dry fry­ing pan – around 30 sec­onds on each side. Spoon the tahini sauce onto the flat­bread and top with the falafel and avocado, then scat­ter with the herbs, squeeze over the lime juice and add the chilli sauce. Roll up and en­joy.
