Jewelled couscous with spiced butter

SERVES 4 as a side PREP 5 mins COOK 5 mins EASY V

Melt 50g butter in a pan, add 1 tbsp majestic Moroccan spice mix and 100g dried fruit. Sizzle for 1 min, then add 150g couscous, stirring to coat every grain in the spiced butter. Season. Turn off the heat and pour over enough boiling water to just cover. Leave for 3 mins, fluff up the couscous with a fork and add a handful of chopped mint, parsley or coriander, and 50g toasted flaked almonds.
