Jewelled cous­cous with spiced but­ter

SERVES 4 as a side PREP 5 mins COOK 5 mins EASY V

Melt 50g but­ter in a pan, add 1 tbsp ma­jes­tic Moroccan spice mix and 100g dried fruit. Siz­zle for 1 min, then add 150g cous­cous, stir­ring to coat ev­ery grain in the spiced but­ter. Sea­son. Turn off the heat and pour over enough boil­ing wa­ter to just cover. Leave for 3 mins, fluff up the cous­cous with a fork and add a hand­ful of chopped mint, pars­ley or co­rian­der, and 50g toasted flaked al­monds.
