Heat oven to 200C/180C fan/gas 6. Cut 3 sweet potatoes into wedges, leaving the skin on. Put on a large baking tray, coat in 2 tbsp oil and 2 tsp smoky Mexican spice mix. Roast for 35-40 mins or until cooked through. GOOD TO KNOW vegan • 1 of 5-a-day • gluten free
