There’s a famous quote (which I don’t agree with) that says, ‘If you want to eat well in Britain, eat breakfast three times a day.’ Well, I tell you what, whoever came up with that left Britain before Sunday. If there’s one thing we do well as home cooks nationwide, one meal we should be truly proud of and that keeps the tradition of sitting together, device-free, making eye contact and talking to each other, it’s a Sunday roast. That’s why it’s been on my menu at The Hand & Flowers very week since I opened and even with two Michelin stars, I will never take it off. So, here’s a taster of the Sunday beef roast we serve. I’ve taken out the complicate­d bits that need a brigade of chefs and a couple of ovens, but kept in the key flavours and tricks that make it extra special, as it should be for the most important meal of the week.
