Marsanne is originally from northern Rhône in France, but it’s been a local speciality in Australia since the 19th century. The state of Victoria has some of the oldest Marsanne vines in the world. This example has the most remarkable flavour, like cooked nuts combined with herbs and peaches; it would really shine with roast chicken. Try it with the chicken tagine on page 24.
