HOW TO MAKE ANY PICKLE
This makes 2 x 450g jars of pickles and works for about 500g of raw produce. Most vegetables can be pickled from raw but some are better cooked briefly in boiling water.
350ml vinegar red wine, white wine, malt, white, or cider
Bring to the boil with… 50g sugar – caster, golden caster, light or dark demerara
+ 1 tsp of dried spice seeds or a few whole large spice cumin, coriander, mustard, fennel seeds, cinnamon stick, or star anise
Leave to cool and pack into a jar with… 500g veg or hard fruit – carrots, cucumbers, pears, turnips, onions, radishes, cabbage, green beans, cauliflower, or beetroot
+ fresh flavours sliced chilli, ginger, garlic, fresh bay, dill, rosemary or thyme
Will keep for up to three months
