This Chorley market café’s daily changing menu showcases hearty British food at its best and most diverse – corned beef hash sits alongside pearl barley risotto, Spanish pork stew and Bees’ famous vindaloo. It’s the sort of cooking we wish we did at home more often but never have time to.

On a break after working in the hospitalit­y industry since the 80s, head chef Mike was getting itchy feet. ‘He’d been making jams and chutneys for gifts,’ explains his wife Sarah. ‘We were sat in a field at a country show munching on a home-cooked game pie, when we had the idea to sell our wares at farmers’ markets.’ They found a unit in Chorley market, submitted a business plan and Bees Country Kitchen was open six weeks later, serving up breakfast, lunch, afternoon tea and dinner.

Since day one, they’ve been on a mission to cook inclusivel­y. ‘One of the things that makes us special is that we want to feed people affordable, satisfying and sustainabl­e food, whether they are foodies, healthy eaters or vegans,’ says Mike. @thebees countrykit­chen
