Warm rum pineapple with lime mascarpone

This delicious dessert is incredibly simple to make, but the finished result looks rather sophistica­ted. The perfect pudding to impress! You can prep the pineapple, lemon zest, and gingernut biscuits in advance so most of the fiddly work has been done ahead.

SERVES 4 PREP 15 mins COOK 10 mins EASY V

1 pineapple

200g mascarpone

2 tbsp icing sugar

1 lime, zested and juiced, plus extra to serve (optional)

4 gingernut biscuits or shop-bought gingernuts

30g butter

2 tbsp honey pinch of cinnamon

1 tbsp rum

1 Cut the top and bottom off the pineapple, then use a breadknife to cut all the way down the sides to take off the outer skin. Cut it in half down the middle and then into quarters. Finally, cut each of these into two long wedges.

2 Mix the mascarpone, icing sugar, and the lime zest together in a bowl, add the lime juice to taste, then set aside. Roughly crush the gingernut biscuits.

3 Heat the butter in a frying pan over a high heat and, once melted, add the pineapple wedges and cook for 6-8 mins until they’re starting to caramelise. Drizzle over the honey and add the cinnamon, then cook for another minute before adding the rum – take care if you are using a gas hob as the rum could alight now, which is great but not necessary.

4 Simmer for a minute or two until the sauce becomes syrupy, then divide the pineapple between four plates. Serve with a generous spoonful of the mascarpone, and scatter over the crushed biscuits and extra lime zest, if you like.
