Ferment kombucha in London
After an hour, you come away with a litre of your own ‘booch’ to nurture
Head to industrial-chic Hackney Wick and you’ll be in for a fizzy treat. A charming retro blue canal boat named Alfred Le Roy, moored on the River Lea next to its brewery, is the home of Jarr Kombucha
( jarrkombucha.com). This innovator of one of the fastest growing fermented drinks trends hosts a series of workshops where you can learn about the fascinating history, science and gut-health benefits of this raw, fermented tea-based beverage, as well as making and flavouring your own brew. So, whether you are a well-seasoned kombucha fan, have dabbled in making your own, or are a complete novice, the workshop will cater to all interests and abilities. After being greeted with a kombucha cocktail, you’ll be taken on a guided tour around the brewery, learning about the commercial side of fermentation, and how the brand was born. Then you step aboard the boat to begin your own experimentations with the provided starter kit. Guides talk you through the process of fermenting organic tea with sugar, before adding the starter liquid and waiting for the magic happen. You’ll also be provided with a mix of cold-pressed juices to blend with pre-made kombucha, so let your creativity flow. After an hour, you come away with a litre of your own homemade ‘booch’ to nurture, along with a Jarr goody bag. While in the area, why not check out the newly opened Silo restaurant (silolondon.com) adjacent to the brewery. This zero-waste concept, which originated in Brighton, makes use of fresh, local ingredients, with dinner dishes including purple sprouting broccoli and native oysters (£9.50), and caramelised oats, Silo yogurt and preserved fruits for brunch (£7) – plus, Jarr kombucha is available on tap.
