USE UP YOUR LEFTOVERS

Food should never be wasted, so here are some ways to use what’s left of this month’s recipes, from Barney Desmazery

1 Tzatziki with tahini

Coarsely grate some cucumber and mix with a pinch of salt. Leave to rest for a minute, then squeeze out the liquid and pat dry. Stir this through any leftover garlic sauce from p76 with some chopped mint, if you like. Serve.

2 Summer bubble & squeak

Crush any leftover potatoes, beans and greens from the chicken piccata on p34. Heat some olive oil in a frying pan and fry the mixture until the potatoes are crisp and the veg is hot. Serve alongside some fried or poached eggs.

3 Punchy pasta salad

Mix any leftover charred broccoli pasta from p38 with any Med-style storecupbo­ard ingredient­s you have – pitted olives, capers, anchovies, and sundried tomatoes would work well. Toss with some rocket, olive oil and lemon juice.

4 Red pepper & feta crush

Lightly crush some leftover saucy butter beans from p39 into the leftover peppers, feta and spinach. Reheat with a little olive oil, some crushed garlic and a pinch of smoked paprika. Serve as a side dish with grilled lamb, chicken or pork.

5 Instant duck noodle soup

Tip any leftover hoisin duck stir-fry from p40 into a saucepan and pour in hot chicken stock to cover. Bring to a simmer and cook until reheated, then season with soy sauce and serve.

6 Rainbow spaghetti omelette

Mix any leftover rainbow spaghetti from p58 with some beaten eggs and grated parmesan. Heat a drop of oil in a small non-stick frying pan and cook the omelette until set on the bottom. Heat the grill to high and finish under the grill. Serve in wedges.

7 Fennel baked eggs

Tip any leftover fennel gratin from p94 into a smaller baking dish, create a few gaps in the mix using a spoon, and crack an egg into each. Bake at 180C/ 160C fan/gas 4 until the whites are set, the yolks runny, and the veg, hot.

8 Quick strawberry cheesecake ice cream

Leave some strawberry ripple ice cream from p82 to soften at room temperate, then quickly stir in some beaten soft cheese, crushed digestives and a little more strawberry jam. Re-freeze before serving.
