USE UP YOUR LEFTOVERS
Make the most of your Christmas leftovers with these second meals from Barney Desmazery
2 Potato & salmon gratin
Layer leftover
slices of pastramicured salmon from p162 and a little chopped dill through your favourite
potato Dauphinoise recipe. If you
have any celeriac or parsnip, finely slice and add to the gratin. Bake at 200C/180C fan/gas 6 for
30 mins until golden.
3 Turkey & kimchi noodle bowl
Bring some chicken stock
to a simmer with a splash of soy sauce and some juice from
the leftover kimchi on p39.
Cook some noodles in the stock, then add
some of the kimchi. Heat through and finish with any leftover shredded turkey (p73).

Vegan pomegranate
slaw
Finely chop any leftover raw veg, such as celeriac,
beetroot, sprouts, cabbage or carrots. Make a dressing with
any unused pomegranate glaze from p28,
olive oil and mustard. Drizzle over the veg and scatter over any leftover pomegranate seeds, if you have them.
5 Quick sprout

Finely chop any leftover sprouts and fry in olive oil to soften. Scatter with mustard
seeds and sprinkle over some caster sugar. Add a glug of cider and simmer for a few minutes. Will keep chilled
for two days.
6 Christmas dinner stack
Tip any leftover roast potatoes, Brussels sprouts and carrots from p74 into a food processor and pulse to make a rough mash.
Shape into cakes, dust with
flour and fry until crispy. Top
with leftover turkey. Drizzle
over some warm gravy
to serve.
7 Ham & cranberry
toastie
Top a slice of bread with grated cheese and shredded leftover ham (p28). Add cranberry sauce, then top with more cheese and a slice of bread.
Butter the outside and fry on both sides until golden.
8 Braised turkey
Put a leftover turkey leg and thigh from p73 in a small oven tray and pour
over some wine (red or white would be
fine) and a splash of port. Cover with foil and bake for 30-40 mins at 180C/160C fan/ gas 4 until the turkey is hot and you have a tasty jus. Serve with mash or bubble & squeak.
