TEMPURA TIPS

• Don’t over-mix your batter. By mixing with a knife you are less likely to do so, and it also ensures your batter will have a few lumps, which is exactly what you want.

• Make the batter just before you use it.

• Ensure the iced water is actually icy cold. This will give your batter a nice crisp texture when fried.
