Prawns are graded by how many there are per pound. The lower the number, the larger the prawn size, e.g. 21/30 means a pound of prawns will contain from 21 to 30 prawns, equating to 40-60 prawns per kilo. These are classed as medium-sized prawns. As a general rule, you should allow 250–300g of whole unpeeled prawns per person when buying them.
