Whip up nut-free muesli bars

there are lots of muesli bars out there you can buy but it’s so simple to make your own. Full of seeds and free of sugar, this no-bake paleo bar is ideal for schoolkids, giving them a healthy treat with a wonderful flavour and mouthfeel that’s full of goodies.

NUT-FREE MUESLI BARS

Preparatio­n time 15 mins plus 3 hours chilling Cooking time nil

Serves 10

1 ripe banana, roughly chopped 100ml coconut oil, melted 90g cacao butter, melted 80g hulled tahini

100g honey or maple syrup

tsp sea-salt flakes

11/2 tsp ground cinnamon 125g pumpkin seeds

125g sunflower seeds

2 Tbsp chia seeds

2 Tbsp flaxseeds

3 Tbsp sesame seeds, toasted 60g shredded coconut

3 Tbsp currants

STEP 1 Line base and sides of a 24 x 18cm baking tin with baking paper.

STEP 2 Place banana, coconut oil, cacao butter, tahini, honey or maple syrup, salt and cinnamon in the bowl of a food processor and blend to a smooth, runny paste.

STEP 3 Place the seeds in a separate large bowl, then stir in shredded coconut. Pour over the banana mixture and mix until well combined.

STEP 4 Spoon seed mixture into the prepared tin and smooth using a palette knife or spatula, then evenly sprinkle the currants over the top.

STEP 5 Cover and refrigerat­e for 2–3 hours until set. Cut into bars and store in an airtight container in the fridge for up to one week.
