Back by popular demand! Bake or chill your way to sweet or savoury treats, whether you make a traditional batter to serve with maple syrup or fridge-set a chocolate bar. The waffle stick hollows hold more butter, syrup and toppings, too. Let your imagination go wild with waffles!

LEMON GINGERBREAD STICKS

Melted butter, for greasing,
plus extra 125g, softened 1/2 cup caster sugar
1/4 cup golden syrup
13/4 cups plain flour
1 tsp ground ginger
1 tsp bicarbonate of soda Icing sugar mixture, to dust
LEMON ICING
3/4 cup icing sugar mixture 1-2 Tbsp lemon juice
STEP 1 Preheat oven to 160°C fanforced (180°C conventional). Grease 2 waffle stick pans with butter. STEP 2 Beat softened butter, caster sugar and golden syrup in medium bowl with an electric hand mixer until pale and creamy.
STEP 3 Stir in combined sifted flour, ginger and bicarb. Turn onto a lightly floured surface and knead briefly and gently until smooth. Cut gingerbread dough in half, then cut each half into 6 equal portions. Roll each portion of dough into a 15cm length. Place each into a hollow in greased pans and press in evenly. STEP 4 Bake for 12–15 minutes or until waffle sticks are golden brown and just firm when lightly touched with fingertips. Cool in pan for 3 minutes. Loosen edges with a small spatula. Turn out sticks. STEP 5 To make lemon icing, sift icing sugar into a small bowl. Gradually stir in enough lemon juice to form a smooth, thick icing. Transfer icing to a snaplock sandwich bag. Squeeze icing into one corner. Snip tip. Pipe icing into each waffle stick hollow to fill. Place on wire racks to set.
