MUSHROOM STROGANOFF

Preparatio­n time 15 mins Cooking time 25 mins Serves 4

1 cup basmati rice

400ml water, plus 150ml boiling water 15g dried porcini mushrooms

1 Tbsp vegetable oil

6 flat mushrooms, sliced

1 onion, thinly sliced

2 cloves garlic, crushed

1 Tbsp sweet smoked paprika

1 Tbsp tomato paste

200ml light sour cream Sea-salt flakes and freshly ground

black pepper, to season Chopped flat-leaf parsley, to serve

STEP 1 Combine rice, water and a pinch of salt in a small saucepan over high heat. Bring to the boil and simmer, covered, on low for 10 minutes. Remove from heat and leave to steam for another 10 minutes, before fluffing up with a fork.

STEP 2 Meanwhile, combine dried porcini mushrooms and boiling water in a small bowl.

STEP 3 Heat oil in a large non-stick frying pan over medium-high heat. Add flat mushroom and onion and cook for 10 minutes, until all the water has evaporated and everything begins to caramelise.

STEP 4 Add garlic, paprika and tomato paste and cook for 1 minute. Meanwhile, drain porcini mushrooms, keeping the liquid, and roughly chop. Add to pan with soaking liquid. Cook on low for 10 minutes, adding a splash of water if it’s a li„le thick. Stir through sour cream and season.

STEP 5 Serve stroganoff on a bed of rice, garnished with parsley.

SPICED CHICKEN SKEWERS WITH MANGO SALAD

Preparatio­n time 5 mins Cooking time 15 mins Serves 2

2 chicken breasts, cut into 4cm cubes Sea-salt flakes and freshly ground

black pepper, to season

1 Tbsp Jamaican jerk seasoning

2 tsp olive oil, plus extra 1 Tbsp

Juice of 2 limes

Ž/’ red onion

100g sugar snap peas, blanched 1 red capsicum, chopped

1 Li”le Gem le”uce,

roughly chopped

Ž/’ mango, cubed

STEP 1 Put chicken pieces in a bowl and season, then add jerk seasoning, olive oil and half the lime juice, and toss well.

Thread chicken onto 4 small skewers.

STEP 2 Heat a chargrill pan over medium-high heat and cook skewers for 5-6 minutes on each side, until charred and cooked through.

STEP 3 Meanwhile, grate onion into a large bowl and add remaining lime juice and extra oil, then season. Toss through peas, capsicum, leuce and mango.

STEP 4 Serve chicken skewers with mango salad.
