KNOCKOUT GNOCCHI

TURN YOUR STORE BOUGHT GNOCCHI INTO A SNAZZY DINNER IN AN INSTANT!

1 CREAMY PANCETTA AND BASIL GNOCCHI

Preparatio­n time 5 mins Cooking time 15 mins Serves 2

Cook 300g store-bought

gnocchi following packet instructio­ns, then drain. Meanwhile, fry 100g diced

pancea until crisp. Add 1 crushed clove garlic and cook for 2 minutes. Stir in 150ml

thickened cream. Season, then toss through cooked gnocchi with 1/4 cup chopped basil and 1/4 cup finely grated parmesan.

Serve with extra grated cheese.

2 BLUE CHEESE„ SPINACH AND WALNUT GNOCCHI

Preparatio­n time 5 mins Cooking time 10 mins Serves 2

Cook 300g store-bought gnocchi following packet instructio­ns, then drain. Meanwhile, melt 50g buer in a pan and wilt 100g chopped spinach. Stir in 1/4 cup crème fraîche and cooked gnocchi. Add 50g chopped creamy mild blue cheese and toss. Serve with chopped toasted walnuts.

3 GNOCCHI WITH FRESH TOMATO AND CHIVE SALSA

Preparatio­n time 5 mins Cooking time 5 mins Serves 2

In a bowl, combine 2 diced ripe tomatoes, 1/4 cup extra virgin olive oil, 1 chopped red chilli, deseeded, 1 Tbsp capers and 1 finely chopped eschalot. Season. Sit for 10 minutes. Cook 300g store-bought gnocchi following packet instructio­ns, drain, then toss through salsa. Serve with chopped chives.

4 BROCCOLINI PESTO GNOCCHI

Preparatio­n time 5 mins Cooking time 10 mins Serves 2

Cook 2 bunches broccolini in a pan of boiling salted water until tender. Remove using tongs, set aside, then cut into thirds. In same water, cook 300g store-bought gnocchi following packet instructio­ns. Drain, tip gnocchi back into pan, then add broccolini, 1/4 cup pesto and juice of 1/2 a lemon. Toss, then serve in warm bowls with grated parmesan on top.
