Try a new twist on pizza, or a delicious slice for your afternoon tea – no one will ever guess the secret ingredient!
PECAN AND DATE SLICE
Preparation time 10 mins plus cooling Cooking time 45 mins
Makes 16 pieces
1 cup self-raising flour, sifted 6 scoops vanilla Ensure nutrition
powder, plus extra 1 scoop 100g butter, chopped
/ cup pecans, finely chopped,
plus extra 2 cups pecans
2 Tbsp desiccated coconut 2 free-range eggs, lightly whisked / cup fresh dates, finely chopped / cup date syrup
STEP 1 Preheat oven to 160C fan-forced (180C conventional). Grease a 20cm square cake pan and line base and sides with baking paper.
STEP 2 Put self-raising flour and Ensure nutrition powder in a large bowl and rub in butter with your fingertips. Add pecans, 1 tablespoon coconut, the eggs and half of the dates and stir to combine. Press mixture firmly into base of prepared pan. Bake for 25 minutes, or until light golden. Cool slightly.
STEP 3 Put extra Ensure nutrition powder, date syrup and 1 tablespoon water in a medium bowl. Stir in extra pecans, and remaining coconut and dates. Press evenly onto the cooked base. Bake for a further 20 minutes.
STEP 4 Cool fully in pan. To serve, remove slice and cut into squares.
CAULIFLOWER PIZZA
Preparation time 10 mins Cooking time 25 mins Serves 2
Olive oil cooking spray
300g cauliflower florets
1 free-range egg
6 scoops vanilla Ensure
nutrition powder
/ cup fresh oregano leaves, chopped / cup finely grated parmesan 125g microwave quinoa brown rice blend, heated to packet instructions
175g broccolini, trimmed
/ cup arrabbiata tomato pasta sauce / cup chargrilled capsicum, chopped / cup green olives
1 small zucchini, thinly sliced
60g goat’s cheese, crumbled
2 Tbsp pine nuts, toasted
STEP 1 Preheat oven to 180C fan-forced (200C conventional). Line a large oven tray with baking paper. Spray baking paper with oil.
STEP 2 Put cauliflower in a food processor and pulse into rice-size pieces. Transfer to a microwave-safe bowl, cover with plastic wrap and heat in microwave for 2 minutes. Squeeze excess liquid from cauliflower.
STEP 3 Put egg and Ensure nutrition powder in a medium bowl and whisk until well combined. Add cauliflower, oregano, parmesan and rice blend, then stir to combine.
STEP 4 Spread cauliflower mixture into a rough large oval shape on prepared tray. Bake for 25 minutes, or until edges are crispy.
STEP 5 Meanwhile heat a medium frying pan over high heat and cook broccolini for 3 minutes, or until it starts to brown slightly.
STEP 6 Spread pizza base with arrabbiata sauce and top with capsicum, olives, broccolini, zucchini, goat’s cheese and pine nuts. Serve.
