A Letter From Amanda

-

Taking a positive approach to some of those life-changing moments can be tricky, but, if you put your mind to it, half the battle has been won. I had a long life-reflecting lunch with a good friend of mine recently, and she made a true, bold statement: “Whether you think you can, or whether you think you can’t, you’re correct.”

A few years ago, I was diagnosed with Type 2 diabetes. Being a massive foodie, this news was devastating. My whole day turned into a well-planned eating regime governed by regular blood checks, time and exercise. The list of items I could eat decreased drastically, and I found myself always having to carry food with me, as it was almost impossible to juggle the risk of being stuck somewhere without being able to eat the correct food that wouldn’t make me sick.

Although it wasn’t a fun time in my life, I embraced the new lifestyle, and quickly realised you are what you eat. My mood changed, I lost weight and I woke up feeling fresh and ready to start a new day and tackle whatever was thrown at me. That’s why, in this issue, guided by the season of change, we have put together an awesome collection of feel-good food choices.

Starting with our cover, Tomato & Goat’s Cheese Tart – not only does it use in-season tomatoes and look scrumptious, it’s also gluten-free, making it possible for most people to indulge in a piece, or two! For those of you following the ditch-sugar trend, our sugar-free treats are a must. I was sceptical at first, but, after trying them, I have come to the conclusion that life without sugar is possible. I am such a sucker for a make-ahead tart, and those Apple & Spice Free-Form Tarts, page 74, are utterly divine. Also, right on trend is raw food, basically anything unprocessed. And, as much as I love a regular brownie, with all its naughtiness, these variations stack up on taste, while being healthier options (see page 54).

Because I believe life is about balance, and for every up there is a down, we have made sure to include a good picnic for a great family gathering to treat dad to some special food on Father’s Day. And, even though my dad crossed to the other side a few years ago, on this day I always raise a glass, make a toast and fire up the barbecue in honour of him and all the other top blokes out there. This menu doesn’t miss a beat and, because it’s spring and lamb is on the must-have list, try the Lamb Cutlets with Pomegranate & Pumpkin Salad, page 127.

There’s change in the air, a spring in my step, and a feeling of true love in my heart. Be kind to yourself and make a change for the better – it could be as simple as swapping a flat white for a soy milk latte. Whatever changes you make, the next month will rock.
