Begin this recipe at least 5 hours ahead. You will need a kitchen blowtorch.

3/4 cup (165g) caster sugar 3 eggwhites Pinch of cream of tartar

RHUBARB CURD

375g trimmed rhubarb, chopped Finely grated zest of 1/2 an orange,

plus juice of 1 orange 1 cup (220g) caster sugar 6 egg yolks 200g unsalted butter, chopped 2-3 drops pink food colouring 2 titanium-strength gelatine leaves
