It’s forward-thinking fusion. 2 FROMAGE ARTISANS (above) seeks to reinvent the cheese wheel in Perth’s CBD. The city’s first licensed fromagerie offers cheese flights that pair four artisan styles with either beer, wine, spirits, champagne or non-alcoholic brews. There’s also a cheese room for takeaway items. 3 Melbourne’s illustrious Grossi clan recently debuted ARLECHIN (above, right), a rakish laneway bar with a 3am licence. Revellers flock here for exquisite libations, rare Italian wines and late-night snacks like bolognese jaffles, cod sandwiches and fried quail. With only 40 seats, it calls to mind an Oz-Italian version of Cheers.
