SPRING FORWARD
The Royal Mail Hotel in Dunkeld, Victoria, a threehour drive from Melbourne, is unveiling a new restaurant this month. The handiwork of British chef Robin Wickens (left), Wickens At The Royal Mail “will celebrate our kitchen garden, extensive cellar and the abundant natural surroundings of the Grampians”, the chef says. That includes heirloom vegetables, edible flowers, and beef and lamb from the hotel’s own farms. Melbourne architect Nick Byrne has concocted a suitably enticing interior that plays up views of Mt Sturgeon.
