The Royal Mail Ho­tel in Dunkeld, Vic­to­ria, a three­hour drive from Mel­bourne, is un­veil­ing a new res­tau­rant this month. The hand­i­work of Bri­tish chef Robin Wick­ens (left), Wick­ens At The Royal Mail “will cel­e­brate our kitchen gar­den, ex­ten­sive cel­lar and the abun­dant nat­u­ral sur­round­ings of the Grampians”, the chef says. That in­cludes heir­loom vegeta­bles, edi­ble flow­ers, and beef and lamb from the ho­tel’s own farms. Mel­bourne ar­chi­tect Nick Byrne has con­cocted a suit­ably en­tic­ing in­te­rior that plays up views of Mt Stur­geon.
