The Royal Mail Hotel in Dunkeld, Victoria, a threehour drive from Melbourne, is unveiling a new restaurant this month. The handiwork of British chef Robin Wickens (left), Wickens At The Royal Mail “will celebrate our kitchen garden, extensive cellar and the abundant natural surroundin­gs of the Grampians”, the chef says. That includes heirloom vegetables, edible flowers, and beef and lamb from the hotel’s own farms. Melbourne architect Nick Byrne has concocted a suitably enticing interior that plays up views of Mt Sturgeon.
