May­fair Ho­tel (45 King Wil­liam St; may­fairho­tel.com.au) is the city’s go-to for lux­ury ac­com­mo­da­tion; a chic blend of Art Deco flour­ishes and modern flair. Book a pack­age that in­cludes the break­fast buf­fet – it’s ex­cep­tional, with hand­made pas­tries, an ar­ray of ar­ti­san ce­real and Bircher muesli, freshly baked bread, con­ti­nen­tal, Asian and Aus­tralian ac­com­pa­ni­ments, and ex­ec­u­tive chef Bethany Finn’s se­lec­tion of honey, in­clud­ing her own, har­vested from bee­hives on the ho­tel’s roof.
