4 small French-trimmed lamb

shanks, any ex­cess fat re­moved 2 brown onions, cut into

very thin sliv­ers

4cm piece gin­ger, peeled,

finely grated

4 car­damom pods, bruised 2 cin­na­mon sticks, bro­ken in half 1 Tbsp ground cumin

2 tsp ground co­rian­der

Pinch ground chilli

400g can no-added-salt

chopped toma­toes

250ml (1 cup) salt-re­duced

chicken stock

2 x 40g sa­chets no-added-salt

tomato paste

2 Tbsp brown sugar

200g tub low-fat Greek-style nat­u­ral yo­ghurt, whisked un­til smooth

160g green beans, trimmed,

steamed, to serve
