BLACKENED SALMON WITH AS­PARA­GUS AND CAB­BAGE SALAD

150g skin­less and bone­less

salmon fil­let, halved cross­ways 2 tsp Cajun spice mix

Olive oil cook­ing spray

1 bunch as­para­gus, woody

ends trimmed

150g (2 cups) finely shred­ded

cab­bage

1 carrot, peeled into rib­bons us­ing

a veg­etable peeler

1/2 red onion, cut into thin wedges 1 Tbsp 97% fat-free may­on­naise

or gluten-free may­on­naise

Juice of ½ or­ange

1 tsp Di­jon mus­tard or

gluten-free mus­tard

Freshly ground black pep­per

50g sour­dough roll or gluten-free

roll, halved hor­i­zon­tally, to serve

1 Pre­heat a char­grill on medi­umhigh. Coat salmon fil­let in Cajun spice mix and spray with cook­ing spray. Put on char­grill and cook for 3 min­utes each side or un­til cooked through. Trans­fer to a plate.
