BLACKENED SALMON WITH ASPARAGUS AND CABBAGE SALAD
PREPARATION TIME: 15 MINS COOKING TIME: 10 MINS SERVES 2 (AS A LIGHT MEAL)
150g skinless and boneless
salmon fillet, halved crossways 2 tsp Cajun spice mix
Olive oil cooking spray
1 bunch asparagus, woody
ends trimmed
150g (2 cups) finely shredded
cabbage
1 carrot, peeled into ribbons using
a vegetable peeler
1/2 red onion, cut into thin wedges 1 Tbsp 97% fat-free mayonnaise
or gluten-free mayonnaise
Juice of ½ orange
1 tsp Dijon mustard or
gluten-free mustard
Freshly ground black pepper
50g sourdough roll or gluten-free
roll, halved horizontally, to serve
1 Preheat a chargrill on mediumhigh. Coat salmon fillet in Cajun spice mix and spray with cooking spray. Put on chargrill and cook for 3 minutes each side or until cooked through. Transfer to a plate.
